Pour ceux que cela pourrait aider, ce terme se traduit par "Beschnittzugabe" en allemand.
Est-ce que "fond perdu supplémentaire de 3 mm" vous semble correct ?

I hope my suggestion is what you are looking for.
Bleed is "fond perdu", as you already know, and you were close to finding the solution for yourself.
In my experience (25 years in the paper & printing sector), a better solution would be "3 mm (supplémentaires) pour fond perdu", as in the answer I posted this morning.

But I am running out of time. I know what "bleed" refers to (http://en.wikipedia.org/wiki/Bleed_(printing)), I was just wondering if someone knew the right term in French.

I expect a moderator will jump in and delete this comment for being off-topic, but in any event, it would be useful for future reference if Gwenl would take the time to react to our contributions.
Incidentally, "bleed" also refers to print which runs right to the edge of the page (eg the famous "bleed into the gutter" - i.e. print running into the fold between two pages).

Bleed is the extra margin allowed for a printed sheet which will be guillotined so that the image or design runs right to the edge of the sheet.
I would agree with your suggestion - "fond perdu supplémentaire de 3 mm" me va bien ...

il faut traduire la phrase entière (voir discussion ci-dessus).

On peut également dire "3 mm pour fond perdu" (il est évident qu'il s'agit d'une marge supplémentaire)
