Tafona
Well, I know what it looks like, but can't for the life of me find a name in English for this contraption!
You can find a photo next to this definition in the DCVB:

It's number 2 in the photo - a wooden frame labelled 'cavall de fusta' (Valldemossa) and 'cavall-fust' (Artà).
Does anyone have any ideas??? Any diagrams of oil mills labelled in English perhaps??? I haven't had any luck.
Many thanks in advance,
Sheila
P.S. I've already asked the client and they pointed out the diagram (above) but were unable to provide any more information.

These may not be the correct terms here, but they are ones used to describe the frame of other pieces of machinery - perhaps they will inspire you :-)
Have you tried looking for paper presses or for printing presses? I just had a cursory glance on Google, but failed to come up with anything. The beam and frame used in wine presses also featured in Gutenberg's press and in presses to take the moisture out of paper in the hand made paper making process. If you do still need this term, write to me and I will ask at the local Paper Museum for the term they use.

Comment: "Thanks very much, Berni - I have kept the original term (in italics) and given a brief descrption in English. I think jig or frame may well be the best translations here. Thanks again! Sheila"
