I think "pe" is the same as "pe de cuba", which you found online. I'm giving this a 3, as my first reference is someone else's translation and may not be totally reliable.
I've never seen "inoculum" before, but that could just be my ignorance. Inoculant is a synonym.
Mass of H2SO4 required per l of inoculum (“pé-de-cuba”) during the acid treatment process, in the fifth cycle for the four yeast strains studied. The value was calculated based on the volume of ‘pé-de-cuba’ (volume of yeast biomass + the volume of fermented medium from the previous cycle + the volume of water used to dilute the yeast cream) and using a specific volume for yeasts as 1.1 g ml⁻¹.
