1. Il vino “Barbera del Monferrato superiore” deve essere ottenuto dalle uve provenienti da vigneti aventi in ambito aziendale la seguente composizione ampelografica:
Barbera: minimo 85%
Freisa, Grignolino e Dolcetto, da soli o congiuntamente: massimo 15%."

Seems to say such wine must be made from grapes from vineyards of companies (wineries?) who produce the following types of wines in the following percentages. Is this correct and is there a better way (surely) to say this?

Vuol dire che queste virgole mi aiutano a capire ancora di più il significato di "in ambito aziendale" in questo contesto. Dentro l'azienda, seguendo le loro procedure; è cosi che ho interpretato queste parole, d'altronde, cos'altro mai potrebbe significare? Comunque, sono consapevole che posso essere anche in errore, e sono in attesa di altri suggerimenti.

I think you understood the meaning: "when they leave the vineyard", implying that the percentage may be subject to variation after the production process :)

I think the writer may be pointing out that the composition of the vineyards is like that before going through the production of wine (after which, the percentages may be subject to a slight variation)
