Verwendet wird der Austernpilz in Saucen, beigemischt oder oft auch flächig paniert.
Er würde im Geschmack dem Kalbfleisch ähneln, erzählt Jacqueline Gasser. «Nicht zuletzt deshalb wird er oft auch als ‹Kalbfleischpilz› bezeichnet.
