the option of being protected by the quality control represented by

PDO is Protected Designation of Origin and PGI is Protected Geographical Indication. Both are used as a standard to show that products are of a high quality, and locally produced.

Groups of producers have to apply for registration under these two quality schemes.

Taking this into account I have opted for 'being protected by' as a translation of 'acogerse' although I did also consider 'registering for' and 'being covered by'.

agree Thomas Walker : I might say "control of quality" here in place of "quality control". "Quality control" I think evokes inspectors & testing, which is not exactly what is meant here.
